Following several courses, you taste a selection of two olive oils & two wines. The Selection tour is expertly guided by our sommelier and introduces you to our family tradition, products and philosophy while enjoying the taste of our extra virgin olive oils and wines.

Experience our family story through our most detailed cellar experience, personally guided by the winemaker. The Winemaker’s Reserve tasting includes an exclusive cellar tour and a tasting of wines in the making directly from the barrels, offering a deep insight into our production philosophy. Through three courses of food and a selection of 6 wine labels — including archive editions and limited series — guests are introduced to the very best our house has to offer.
The tasting includes:
- a cellar tour and introduction to the production process
- an expert-led tasting of 6 selected Ipša wine labels (including reserve and archive wines) with tastings directly from the barrel
- 3 food courses based on seasonal and local ingredients
- presentation and tasting of premium extra virgin olive oils with homemade bread

In several courses, guests will experience a complete Istrian adventure starting in the mystical Motovun forest. Led by an expert truffle hunter and search dogs, guests participate in an authentic truffle hunt, followed by relaxation with our premium wines and olive oils. Through several courses, the centerpiece of which is dedicated to the freshly picked truffle, guests get to know the family tradition and production philosophy of the Ipša family.
The tasting includes:
- an authentic truffle hunting experience in the Motovun forest accompanied by a licensed truffle hunter and dogs
- an expert-led tasting of 3 selected Ipša wine labels and a selection of extra virgin olive oils
- several food courses based on local ingredients, including a main course with fresh truffles
- a cellar tour and introduction to the production process
